That&#8217;s what you will hear at least once a day when\u00a0<\/span><span style=\"font-family: 'Raleway Light', serif;\">travelling through the coffee regions of Ethiopia. And it&#8217;s true, Ethiopia is where the <\/span><span style=\"font-family: 'Raleway Light', serif;\">arabica coffee tree originates and where it still grows wild. It is also the country with\u00a0<\/span><span style=\"font-family: 'Raleway Light', serif;\">the highest number of arabica varieties in the world. <\/span><\/p>\n<p lang=\"zxx\"><span style=\"font-family: 'Raleway Light', serif;\">Even though today, only around 5 percent of the coffee harvested in the country is <\/span><span style=\"font-family: 'Raleway Light', serif;\">from truly wild coffee forests. Most of the coffee production in the Limmu region,\u00a0<\/span><span style=\"font-family: 'Raleway Light', serif;\">where our coffee comes from, is so-called \u201esemi wild\u201c coffee. This means that the <\/span><span style=\"font-family: 'Raleway Light', serif;\">coffee forests are managed by the farmers. The coffee in\u00a0these forests grows wild but it&#8217;s also supplemented by shrubs transplanted from a nursery. The smaller coffee trees flourish under a <\/span><span style=\"font-family: 'Raleway Light', serif;\">canopy of big shade trees \u2013 from far and above it looks like a natural rainforest. But <\/span><span style=\"font-family: 'Raleway Light', serif;\">some of the canopy trees are cut by the farmers to let some sun though.\u00a0<\/span><\/p>\n<p lang=\"zxx\"><span style=\"font-family: 'Raleway Light', serif;\">Managing the forest\u00a0helps to increase productivity. <\/span><span style=\"font-family: 'Raleway Light', serif;\">And that&#8217;s very <\/span><span style=\"font-family: 'Raleway Light', serif;\">important for the farmers who make their living from coffee. But it&#8217;s also slowly <\/span><span style=\"font-family: 'Raleway Light', serif;\">deminishing the number of arabica varieties in Ethiopia \u2013 and by that influencing the <\/span><span style=\"font-family: 'Raleway Light', serif;\">coffee&#8217;s taste. \u201eThe government programm to increase productivity is clearly <\/span><span style=\"font-family: 'Raleway Light', serif;\">necessary to improve the situation of the farmers \u2013 but at the same time it is harmful <\/span><span style=\"font-family: 'Raleway Light', serif;\">for the natural complexity of the Ethiopian coffee\u201c, explains our roaster Philippe.<\/span><\/p>\n<p lang=\"zxx\"><span style=\"font-family: 'Raleway Light', serif;\">In Limmu, the Jimma Agricultural Research Center and the Institute of Biodiversity are <\/span><span style=\"font-family: 'Raleway Light', serif;\">trying to overcome this conflict of objectives.
